Tequila Infused Pork Chops

Tequila Infused Pork Chops When you spot a perfect pork chop at the butcher, you can’t pass it up! Our festive main course for Cinco de Mayo features a healthy splash of tequila, which adds a welcome sweetness to each pork chop.

Ingredients

4 pork chops, 1 ½ inch in thickness

¼ cup avocado oil

1 tbsp sea salt

½ cup tequila

¼ cup brown sugar

2 tsp ground cumin powder

3 tbsp freshly minced garlic

1 jalapeño, seeded and diced small

1 cup fresh pineapple

1 lime, juiced

Directions

Place pork chops in a marinade bag or a square glass baking dish. Whisk together oil, salt, tequila, brown sugar, cumin, and garlic. Pour marinade over the chops. Cover pork chops and refrigerate overnight, turning once in the marinade time. Recommended method of cooking: smoke the pork chops for 30 minutes, then finish them on the grill. While pork chops are on the grill, combine pineapple, lime juice, diced jalapeño, and a dash of salt in a bowl to make a salsa. Once the pork chops are done, spoon pineapple salsa over each chop. Enjoy!
