Salted Roast Pork

The crackling sounds in the oven + the comforting aroma that fills the house is all the convincing we need to make this simple roast. Only two ingredients come together for dinner that truly showcases how flavorful pork is all by itself.

6-8 pounds bone in pork shoulder

Sea salt

Directions

Preheat oven to 325 degrees. Place pork in a large roasting pan. Cover the entire shoulder generously with sea salt. Place one cup of water in the pan and cover. Roast for 3 hours, then uncover and lower oven temperature to 300 degrees. Roast for another 3 hours until pork is cooked to your liking. We cooked ours to 180 degrees and it was perfect. Slice or fork large pieces off the roast. Our favorite way to enjoy this simple roast is with plain white rice or in a tortilla with avocado.
