Tuscan Summer Soup

Summertime Soup! A delicious solution for when those summer storms come rolling in.

Ingredients

1 ½ lb ground pork

1 onion, diced

2 russet potatoes, diced

6 cups loosely packed kale, chopped

8 cups chicken stock

¾ cup heavy cream

1 tbsp garlic powder

1 tbsp Italian seasoning

3 tsp red pepper flakes

2 tsp salt & pepper

3 tsp fennel seed

Directions

Turn your crockpot on high. Place pork and all the spices in crockpot- breaking up the pork with a spoon. Add in the onion, potatoes, kale, stock. Cook on high for 8 hours, then on low heat for another 2 hours if needed. Stir in the heavy cream. Using an emersion blender, roughly blend half the soup. Top with red pepper flakes and parmesan shavings.
