Smoky Pork Tenderloin Sheet Pan

As we celebrate American Heath Month alongside the American Heart Association, it’s time to treat the family to a simple, beautiful and mindful meal. Extra lean protein, like pork tenderloin, is heart healthy and filled with 7 essential vitamins and minerals.

2lbs pork tenderloin, cubed

½ cup olive oil

2 tsp salt and freshly ground pepper

2 tsp smoked paprika

2 tsp garlic powder

1 tsp onion powder

2 tsp dried oregano

¼ cup honey

4 cups assorted vegetables (boiled potatoes, bell peppers, onions, cherry tomatoes, asparagus)

Directions

Place cubed pork tenderloin on sheet pan along with assorted vegetables. Drizzle olive oil over the pork and veggies. Season pork and veggies with salt and pepper. Toss the pork and veggies together. Next, combine all other dried spices together and sprinkle over the pork tenderloin, ensuring the pork is covered in spices. Drizzle the honey over the pork tenderloin pieces. Bake at 375 degrees for 15 to 20 minutes until the pork is cooked to 145 degrees – it will cook fast. Note – if you like your veggies extra roasted, pre roast them before you add the pork to the sheet pan.
