Green Chile Pork Blanket Dumplings

Blanket dumplings, Colorado style!

Ingredients

1 lb ground pork

1 tsp salt

1 tsp garlic powder

1 tsp onion powder

1/3 cup diced green chiles, roasted (from a jar or can is fine!)

3/4 cup shredded cheese

1 egg

Wonton wrappers

Cilantro oil

Directions

Combine all ingredients together, except wonton wrappers and cilantro oil. Create “meatballs” with the ground pork mixture and place them in a prepared baking pan. Cover each “meatball” with a wonton wrapper and secure it down, pressing the edges down on all sides, creating a dumpling look. Drizzle dumplings with olive oil, then pour 1/3 cup of water into the bottom of the baking pan. Cover pan with foil and bake at 350 degrees for 30 minutes until the dumplings are steamed and cooked through. Drizzle with cilantro oil and serve right away.
