Pork Fried Rice – Chef Seeley

An incredible Pork Fried Rice Recipe you don’t want to pass!

Ingredients

4 cups steam white rice

2 cups smoked pulled pork

3 eggs, scrambled

1/2 medium white onion, chopped

2-3 choice vegetables.

1/2 cup fresh  Broccolini, stems cut back

1/2 cup fresh asparagus tips

1/2 cup edamame (frozen)

1/4 c gluten free soy sauce (tamari)

1 tbsp Vegetable oil

2 tsp toasted sesame oil (Divided in 1/2 tsp portions)

Directions
  1. Steam rice per package directions.
  2. Heat vegetable oil in large pan (with lid) and Sautè onions, broccolini, asparagus, and edamame until veggies are tender and onions are translucent. Set aside.
  3. Scramble the eggs.
  4. Add veggies back to pan with the eggs and mix.
  5. Add the steamed rice to the pan 1 cup at a time along with sesame oil 1/2 tsp at a time. Then spray or spoon the soy sauce over rice. Mix well.
  6. Repeat 5. Until all ingredients have been added.
  7. Turn and stir until very well mixed.
  8. Turn heat down to low and Cover with a lid for two minutes
