Pumpkin Pork Curry

Celebrate the start of fall with this easy, kid approved curry!

Ingredients

1.5 lbs cubed pork in 1 inches (pork stew pieces, boneless country ribs or pork shoulder)

1 15 ounce can pure pumpkin

1 15 ounce can full fat coconut milk

1 small onion, diced

2 tsp salt

1 tbsp garam masala

1 tsp ground ginger

1 tsp garlic powder

Fresh cilantro and lemon juice

Directions

Place all ingredients into a crockpot except the lemon juice and cilantro. Stir ingredients together, then cover and set crockpot to low. Cook for 4 to 6 hours until the meat is cooked and tears apart easily. Season with more salt if needed. Sprinkle lemon juice over curry and serve over rice with fresh cilantro.
