Cereal Crusted Pork Chops

Putting the ends of the cereal boxes to good use. These crispy baked pork chops hit the spot!

1 ½ lb pork loin, cut into half inch thick slices

1 ½ cup mayonnaise

Juice of one lemon

2 tsp lemon pepper

1 tsp garlic powder

1 tsp onion powder

4 cups rice cereal, cornflakes or crispy rice squares

1 tsp smoked paprika

Directions

Preheat oven to 400 degrees on the convection setting. In a big bowl, stir together mayonnaise, lemon juice, lemon pepper, garlic powder and onion powder. Add slices of pork to mayo mixture and stir until well combined. Cover bowl and marinate in the refrigerator for at least 2 hours. Roughly crush up the rice cereal in food safe plastic bag. Add the smoked paprika to the cereal. Mix well. Coat eat pork slice in the rice cereal. Place each chop on a baking rack over a sheet pan. Bake for 20 minutes until pork is crispy and cooked.
