Jamaican Jerk Kabobs

Summer on a stick is here! Grab some tenderloin and make a meal of it!

It doesn’t get easier or healthier than summer pork on a skewer!

Ingredients

2 lbs pork tenderloin, cut into medallions for a skewer

Drizzle of oil

3 tbsp Jamaican jerk seasoning (plus 2 tsp salt if your seasoning is unsalted)

3 tbsp packed brown sugar

1 red bell pepper, cut for a skewer

1 green bell pepper, cut for a skewer

1 small white onion, cut for a skewer

2 cups fresh pineapple, cubed for a skewer

Skewer sticks

Directions

Lightly drizzle olive oil over pork tenderloin pieces. In a bowl, stir together tenderloin medallions, brown sugar and seasoning. Stir gently until each piece of pork is well coated. Layer pork, fruit and vegetables onto each skewer. This recipe makes about 6 to 7 skewers. Grill on each side for 3-5 minutes until pork is cooked. We love these kabobs with coconut rice.
