Layered Enchiladas

When in doubt, make enchiladas!
1 lb ground pork
1 cup cream cheese
1 cup diced green chilis
12 – 15 corn tortillas
28 oz can green enchilada sauce
1 ½ – 2 cups shredded cheese
Brown pork in a large saucepan. Once cooked, add in cream cheese and green chilis. Stir until cheese melts and mixture is bubbling. Remove from heat. Grease a casserole dish. Place a layer of tortillas on the bottom of the dish. Add a heaping spoon of the pork mixture and spread around the tortillas. Repeat the layering and end with a layer of tortillas. Depending on the size of your casserole dish, you might have two or three layers of pork mixture and three or four layers of tortillas. Pour enchilada sauce over the casserole. Top with cheese. Bake covered for 30 minutes at 400 degrees. Remove cover and bake for another 15-20 minutes until cheese is golden brown and bubbling.
