Pork Tikka Masala

Dull winter days call for a bright protein packed curry! With just a hint of spice to warm you up, this takeout worthy curry is so easy to make and uses lean meat to keep you full and healthy. Dairy free, gluten free, and full of goodness, it checks all the boxes for any family meal.

Ingredients

For the marinade:
1 lb boneless pork stew meat or pork loin, cubed
½ cup plain yogurt
1 tsp salt
Juice from half a lemon
2 tbsp tikka masala spice paste (not powder) – found at your local Indian grocery store

For the curry:
1 small yellow onion, chopped fine
6 ounce can tomato paste
3 tbsp tikka masala paste
1 can full fat coconut milk
Salt to taste

Directions

In a large bowl, combine cubed pork, yogurt, tikka masala paste, salt and lemon juice. Mix well and marinate 3 hours or overnight in the refrigerator.

After marinating, place the pork mixture into a crockpot. Add in the onion, tomato paste, masala paste and half the can of coconut milk.

Stir together and cook on the low crockpot setting for 6 hours. Open crockpot and stir, adding more coconut milk if the curry seems dry. Mix in salt to taste and garnish with fresh chopped cilantro. Serve over rice.
