Put some pork on your menu this St. Patrick’s Day! We love a twist on a classic and this one is just too good. Beer infused pork takes this traditional sandwich to the next level, and it’s love at first bite!

1 boneless pork butt (about 5 lbs)

1 sweet onion, thinly sliced

1 bottle of Irish beer

1 tablespoon sea salt

Directions

Directions:

Place pork fat side up in crock pot. Add in onions, beer and salt. Cook on high for 10 hours until pork is tender and falls apart easily. Once fully cooked, pull the pork apart and let it sit in the beer mixture for an hour on low heat. Season with more salt if needed. We highly recommend using this pork to make a Reuben sandwich.

 

To assemble your Rueben sandwich:

Toast and lightly butter two slice of rye bread. Spoon thousand island dressing onto each toasted sliced. Add swiss cheese to both slices. On one slice, layer on the Guinness pulled pork. Top with a sprinkle of carraway seeds and add sauerkraut. Top with other slice of bread/cheese. Wrap in parchment paper and toast in the air fryer or oven until the cheese has melted.
