Chorizo Taquitos

Ingredients

1 lb pork chorizo

1 large russet potato, cubed small and cooked

10 – 12 standard corn tortillas

¼ cup mayonnaise

¼ cup green chili sauce

Directions

Brown chorizo in a pan over medium heat. Mix in the potato cubes. Turn off heat. Fold in mayo and green chili sauce. Stir together well. Spoon a tablespoon and a half of mixture into each corn tortilla and roll up. Cook in air fryer at 400 degrees for 5-8 minutes or fry all sides in a frying pan until golden brown. Top with sour cream, guacamole, salsa.
