Pork Wellington: Fancy & On Budget

Christmas dinner is calling! This 4 ingredient, no fail pork wellington, is so impressive and downright delicious. Follow the 4 “P’s” to success: pork, puff pastry, pate & prosciutto.

1 Pork Loin Filet – about 1 ½ pounds

1 puff pastry sheet

4 – 6 ounces of pate

4 slices of prosciutto

Salt/Pepper

Directions

Season your pork loin with olive oil, salt and pepper. Melt a half stick of butter in a skillet. Brown the pork on both sides – about 5 to 7 minutes on each side. Roll out your puff pastry. Spread your pate of choice over the entire pastry. Layer slices of prosciutto over the pate. Place your browned pork loin on one end of the pastry and roll it up, tucking in the sides and sealing the pastry. Top pastry with egg wash and bake at 375 degrees for 25-35 minutes until pork reaches a temperature of 150 degrees. Let the wellington rest for 10 minutes, then slice and enjoy!
