Beer Braised Colorado Pork with Irish Cheddar Potatoes

Ingredients

2 lbs boneless country style pork ribs

2 tsp coarse sea salt

1 tsp toasted caraway seeds

1 can beer

2 lbs red potatoes

4 tbsp butter

1/2 cup cream

1 cup shredded Irish cheddar like Dubliner

Directions

Place ribs in a deep roasting dish or Dutch oven. Sprinkle pork with salt & caraway seeds. Pour beer into the side of the pan being careful not to wash away the salt and caraway seeds from the top of the pork. Ensure pork is halfway submerged in the beer. Cover and place in oven for 3 hours at 325 degrees.

While pork is cooking, boil potatoes in salted water until fork tender. Strain and mash with butter and cream. Fold in the cheddar and season with salt if needed.

When pork is cooked, cut each rib into 4-5 large pieces and let sit in beer for a few minutes. Spoon the beer braised pork over the mashed potatoes with a little of the beer from the roasting pan. Sprinkle with chives and enjoy!
