BBQ Pork Lettuce Wraps

A lean, mean, protein packed machine. We whipped up some pulled pork using heart healthy pork loin. With pork, you never have to sacrifice flavor!

3 lbs boneless pork loin

2 tbsp bbq seasoning or any all-purpose bbq rub

2 tbsp olive oil

1 small onion sliced thin

1 18-ounce jar of bbq sauce

2 tbsp apple juice or vegetable stock

Lettuce cups

Directions

Place pork loin in a slow cooker. Sprinkle the seasoning and olive oil over the loin. Next, add in the onion and bbq sauce. Clean out the sauce jar with apple juice or stock and pour into the slow cooker. Cook on the high setting for 6 to 8 hours until the pork easily come apart. Pull the meat apart with two forks, and let it soak in the juices. Spoon the bbq pork into lettuce cups. Top with fresh jalapeno slices, avocado and feta crumbles.
